Sweet and spicy - make your own hot sauce
Lets make hot sauce
200g Angello peppers (these peppers maybe be small but they are sweet to taste and give the sauce a sweet base)
4 ripe tomatoes (or punnet of baby plum tomatoes for sweetness)
3 x birds eye chillies (these give the heat)
1 x white onion
1 x pink lady apple (the sweetness counteracts some of the heat of the chillies)
1 x clove of garlic
1 x small knob of ginger
1 tablespoon of white wine vinegar
1 teaspoon of salt
roughly chop your angello peppers (if you can't get them then go for the usual red supermarket bell peppers), the tomatoes, the apple, the onion, the ginger, the garlic and chilli peppers (remove the seeds from 2 to reduce the heat or leave them in if you want the kick). Place them all in a food processor and blend.
Put the resulting puree in a saucepan and bring to a simmer. once simmering add in the white wine vinegar and salt. Cook out the vinegar (the sharp smell of the vinegar will disappear)
Strain and store.
