What to do with leftover halloween pumpkin?

This Halloween we've taken our pumpkin filling from our Jack O Lantern and made pumpkin puree into something savoury and sweet to enjoy after the trick and treat.


Savoury - Pumpkin tortelloni and

Sweet - Pumpkin creme brulee


For the pumpkin tortelloni we introduced fresh sage, shallots and salt and pepper to give the puree a much more savoury flavour.

For the creme brulee we added sugar and double cream infused with vanilla.


But first for the pumpkin puree:


Place the pumpkin on a secure chopping board. Take a sharp knife and cut a circle around the stalk on the top of the pumpkin. Pull the stalk 'hat' away and then scoop out the seeds and innards. Scoop out as much of the filling as possible as you carve your pattern. Take your jack o lantern trimmings and cut into roughly equal pieces of 1cm dice.


Note, the seeds can be spread out on a baking sheet and roasted with salt and pepper, paprika or nutmeg or even roasted and then coated with honey to make a little snack.


Once your pumpkin is diced, place into a pan of salted boiling water to cook. The pumpkin is ready when they can be easily pierced with a knife. Strain the pumpkin and cool. Place the strained pumpkin into a blender and pulp. If the pumpkin is very thick add a little of the cooking water in to loosen.


Set aside.
