Building a fine dining starter: carrot

Today we're going to construct a fine dining starter. Remember great dishes are all about "taste, temperature and texture".

This starter makes the most of the carrot. To elevate it's flavour and texture to unexpected heights we use a little culinary know-how and subtle presentation.

This dish comprises:

- a roast carrot

- a savoury carrot cake

- a wild garlic shortbread

- a carrot pannacotta

- a carrot vinaigrette

- pickled carrot ribbons

each of the component parts are simple to construct, it's just their combination, presentation, seasoning and execution which gives this dish it's "fine-dining" edge.
