Building a dish: Bara Brith dessert

Earlier today Mum and I baked some Bara Brith so for dessert tonight we're using slices as a base for a simple dessert.

You'll need: 1 apple and 1 pear, a small knob of butter, a splash of water and a sprinkle each of sugar, cinnamon and allspice and cream to finish.

Prepare the fruit by removing the skin, pips and stalks. Chop into roughly equal size cubes (important for even cooking). Slowly stew the fruit in the butter, once starting to soften add the splash of water and sprinkle over a little sugar. Cook for a minute or so and then add the spices. Taste and if you feel it's too sour for your tastes then add more sugar or honey to sweeten (vegans could agave or brown rice syrup). You could always add a little lemon juice or lemon zest.

Once satisfied, arrange the bara brith at the base, then share out the stewed fruit on top of the bara. Finish with cream, natural yoghurt or ice cream. Apple blossoms could also be used as an edible garnish. Enjoy.
