In the kitchen with Mum - Day 2 Bara Brith 'Speckled Bread'
Following on from Day 1 where we soaked 450g of dried fruit in tea, today we finished the Bara Brith 'Speckled Bread'.
Collect together 400g of self-raising flour, 2tsps of mixed spice, 1 beaten egg and a splash of milk. Mix the self-raising flour and the mixed spice and mix this is with the soaked fruit. Add the beaten egg and splash of milk and continue to mix until all the ingredients come together. If the mix appears too dry (stiff and does not readily fall from the spoon after mixing) then add a splash more milk.
Once the mix is well combined and falls readily from the mixing spoon, dollop it into a greaseproof paper lined bread tin and place into a preheated oven (set to 170 degrees celsius) and bake for 90minutes until a skewer inserted into the bara brith comes out clean.
Bara brith is traditionally served sliced with butter.
